Cortar la calabaza por la mitad y vaciarla. Poner en una fuente para horno y rociar con un chorrito de aceite de oliva y sazonar con sal y pimienta. Hornear durante unos 45 minutos.<\/p>\n<p>2 \/ Picar finamente las cebollas rojas. Saltear en una sart\u00e9n con un chorrito de aceite de oliva, miel y vinagre bals\u00e1mico. Cocinar a fuego lento. Machacar las casta\u00f1as y cortar las setas en trozos peque\u00f1os. Calentar una sart\u00e9n con un chorrito de aceite de oliva, y echar el ajo y los champi\u00f1ones. Termina poniendo las casta\u00f1as triturados y el perejil picado en la sart\u00e9n.<\/p>\n<p>4 \/ Cuando las calabazas est\u00e9n bien asadas y tiernas, s\u00e1calas del horno. Lavar y pelar las remolachas con un cuchillo y cortar por la mitad. Ponerlas en una cazuela en el horno y proteger las hojas con papel de aluminio para que no se quemen demasiado.
